Why Great Restaurant Service Matters

We work hard to give our guests the experience and attention they’d receive at a fine dining restaurant, without the big bill. That’s why it makes our day when folks write reviews with comments like, “The service was excellent and wait staff pleasant to dine with. In particular, request David as a server if you can get him. This gentleman commands quite a vocabulary and enjoys his work and demonstrates this in his communication to you.” Or, “Our server, Alex was very attentive and very personable. We were even paid a visit by Lou the manager; he really seemed interested in what we thought of the restaurant.” That’s our reward for taking care of you.

We do our best to make sure that when you do know a server or bartender or cook that you know them for being informed and attentive. We have regular meetings with our staff to keep them up to date on specials, new menu items, new drinks, and the latest wines. They can help you find the right wine or cocktail pairing, and make sure you haven’t missed a menu item you might enjoy.

In the kitchen and behind the bar, we hire talented folks who know their way around the ingredients. After all, when you invest the time and energy necessary to identify great suppliers with integrity, you want to make sure that you complete the task by having a skilled staff that can take advantage of the quality ingredients.

Nathan Lindley trained under Frank Stitt, the godfather of contemporary Southern cuisine, at Bottega in Birmingham, Alabama. Nathan instilled Stitt’s combination of reverence for local foods and strong cooking techniques in Public House, and teaches that philosophy to the staff.

It matters to us to that people know who is taking care of them at Public House. Many of our team have been with us for years, and our regulars know them by name. One of the differences between being just a bar or restaurant and being part of the community is when you form a bond with your servers. We love that our regulars know Speedy, Simply, and Stretch, and come by to see them as much as they come for the food and drinks. You’ll often seen Nathan or Michael Lindley around the restaurant making sure every detail is just right. It’s reassuring to know the people preparing, serving and managing the restaurant, who become part of your community.

When our guests write reviews like, “Special treatment started with excellent service by Matt” you can be confident that the service you receive is your window into the level of care we put into each part of your experience, from the field to the kitchen to your table to the moment you fold up your napkin after your meal. When you care as much about local, quality ingredients and the integrity of our menu as we do, having a well-trained staff is simply the best way to insure that your dining experience is satisfying on every level. It’s simply the best way to take care of you, our friends and neighbors.
